Coffee Chery introduces 10 criteria for choosing quality coffee:
1- Bitter taste: from caffeine content, not bitter from dark roast.
2- Rate of ripe beans: when processing coffee from 99%.
3- Processing method: Natural, Washed, Honey Washed. Different processing methods produce different flavors and qualities of coffee beans, because it is related to the amount of sugar in the coffee fruit that is absorbed into the coffee beans and fermented. The Natural processing method is the method that creates the best quality coffee in the world. RedDot Specialty Coffee is using coffee beans processed using the Natural method.
4- Flavor: comes from light roast, medium roast, dark roast. At different roasting levels, the temperature will transform the coffee beans after fermentation to produce different flavors. In specialty Robusta, when roasted, it can produce caramel, chocolate and whiskey flavors...
5- Coffee grinding: Coffee beans after roasting are ground at different levels of fineness to suit each coffee extraction method. This is an important stage, with different fineness, after extraction will produce "finished coffee products" with different flavors.
6- Coffee extraction: “cold or hot”. Different temperatures and times in each coffee extraction method will produce different quality finished coffee products. This step depends on the Barista's understanding of ingredients and processing methods.
7- Growing area: The growing area needs to meet the standards of each coffee variety to produce the best quality coffee fruit.
8- Coffee varieties: Different coffee varieties will produce different flavors of coffee beans after processing. Specialty coffee varieties, purebred, less hybridized, although low in yield, will produce better quality coffee than high-yielding varieties. Of course the price of coffee is also higher.
9- Packaging and preservation: After roasting coffee, it needs to be packaged and preserved to standards to maintain quality during use. For example, it is necessary to pack coffee in a bag with a one-way valve to ensure Coffee beans are always dry and best preserved.
10- Robusta or Arabica: Depends on each individual's taste, such as liking light or strong bitterness, sour taste or not, liking fruit flavor or sweet caramel flavor. But any type of coffee bean can produce the highest quality coffee.
